Desi ghee is a type of clarified butter, also known as drawn butter, used in Indian cooking. Many households in India use homemade ghee drawn from cow milk. The clarification process separates the milk solids and water from the fat. When making desi cow ghee, the butter is cooked until the milk solids turn brown.
