Chicken Vegetable Creole

Nonstick cooking spray

1-pound boneless, skinless chicken breasts cut into large chunks

1 large onion, chopped

1 (14-ounce) can diced tomatoes

1⁄3 cup tomato paste

2 stalks celery, chopped

1-1/2 teaspoons garlic powder

1-teaspoon onion powder

½ teaspoon salt

¼ teaspoon red pepper flakes

1⁄8 teaspoon ground black pepper

1-1/2 cups broccoli florets


  1. Spray a large skillet with nonstick cooking spray and heat over medium heat.
  2. Add chicken and onion; cook, stirring frequently, for 10 minutes.
  3. Stir in all remaining ingredients except broccoli and cook for minutes, stirring occasionally.
  4. Stir in broccoli, cook for 5 minutes more. Serve while hot.
