Chiquita Banana Oatmeal Smoothie Recipe

Ingredients:
2 whole Chiquita Bananas (best with brown flecks on peel)
2 cups ice
1/3 cup yogurt – preferably Greek yogurt flavored with honey
½ cup cooked oatmeal
1/3 cup almonds

Directions- Cook oatmeal according to package. Pour all ingredients into blender pouring ice in last. Blend on high for 30 seconds or until smoothie thickens.

Apple Banana Muffins (Makes 12)

Ingredients:
Cooking Spray
¼ C. Canola Oil
½ C. Pure Maple Syrup
1 6-oz. container low-fat vanilla or lemon yogurt (I used Greek)
2 small ripe bananas, mashed
1 large egg
1 small apple, cored and finely chopped (or grated)
2C. Whole Wheat flour (I used whole wheat pastry flour)
1 t. baking soda
1 t. baking powder
1 ½ t. cinnamon
1 t. allspice
½ t. ground cloves
¼ t. salt

Directions - Preheat oven to 350°.  Coat a 12-cup muffin pan with cooking spray.  In a large bowl, combine the oil, maple syrup, yogurt, bananas, egg, and apple.  Stir mixture to blend well.

Sprinkle flour, baking powder, baking soda and spices over the wet ingredients.  Stir until just combined, but do not over mix.

Divide the batter among the muffin cups.  Bake for 20-25 min.

Apple & Oatmeal Bars

Ingredients:
Olive Oil cooking spray
4 C. peeled, cored and diced apples
4 T. raw honey
½ t. ground cinnamon
¼ t. ground nutmeg
1 C. quick-cooking rolled oats
1 C. whole wheat flour
1 t. baking powder
½ t. sea salt
1 egg
½ C. natural peanut or almond butter
1 T. olive oil
¼ C. unsweetened applesauce
Lemon or vanilla Greek yogurt for topping

Directions - Preheat oven to 350°.  Coat a 9×13-baking pan with cooking spray.

In a large bowl, combine apples, 1 T. honey, cinnamon and nutmeg.  Set aside.

In a separate large bowl, whisk oats, flour, baking powder and salt.  In a small bowl, lightly beat egg; mix in nut butter, oil, 3 T. honey and applesauce until well blended.  Add egg mixture to flour mixture and mix until well blended and a thick batter forms.

Transfer batter to pan.  Place a sheet of wax paper over top and press down with your hands to spread mixture evenly over bottom of pan; remove wax paper.  Pour apple mixture over top, spreading evenly.  Bake for 30 minutes, until apples are soft, but not brown.  Let cool for 10 minutes.  Cut into squares and top with yogurt before serving.

 

Healthy Oatmeal Bites Recipe

Ingredients:
1-cup dry oatmeal (old-fashioned is preferred)
2/3 cup toasted coconut flakes
½ cup peanut butter
½ cup ground flaxseed or wheat germ
½ cup chocolate chips (optional)
1/3 cup honey
1 tsp. vanilla

Directions – Stir all ingredients together in a bowl until thoroughly mixed. Let chill for 1 hour in fridge. Once chilled roll into small bite size balls (mine were about 1” in diameter. Continue to keep in fridge to keep shape until ready to eat.

Turkey Apple Sausage Breakfast Sandwiches

Get a head start on dinner!

 

Ingredients:

(Turkey Apple Sausage)

1-pound ground turkey

1 red delicious apple, peeled, cored, and chopped

2 large cloves garlic, finely chopped and divided into 2 portions

ó teaspoon dried thyme

¼ teaspoon red pepper flakes

1 teaspoon dried sage

1/4teaspoon ground black pepper

1⁄8 teaspoon ground coriander

Nonstick cooking spray

 

(Breakfast Sandwich)

2-1/2 cups chopped mushrooms

1-1/2cups chopped onions

6 whole-wheat English muffins

6 slices tomato

 

Directions: - In a large bowl, combine turkey, apple, one garlic clove, thyme, red pepper flakes, sage, ground black pepper, and coriander; mix well.

 

Form the turkey mixture into 8 patties

 

Spray a large skillet with nonstick cooking spray and heat over medium heat.

 

Cook patties until they are cooked through, about 5 to 7 minutes per side. Set aside.

 

Spray the skillet with nonstick cooking spray and sauté the remaining garlic for 3 minutes

 

Add mushrooms and onions. Sauté until the mushrooms are tender and onions begin to brown, about 5 minutes.

 

Cut each English muffin in half. Place a Turkey Apple Sausage patty, 1⁄3 cup of mushroom-onion mixture, and a slice of tomato on 6 English muffin halves.

 

Cover each sandwich with the other English muffin half and enjoy!

 

 

 

 

 

 

 

 

 

Strawberry Smoothie (Makes 3 servings.   One cup per serving.

 

Ingredients

1/2cup 100% orange juice

1 large banana, peeled and sliced

1 cup fresh or frozen strawberries, thawed

1-cup low-fat vanilla yogurt

5 ice cubes

 

Directions:

Combine orange juice, banana, and half the strawberries into a blender container. Blend until

Smooth.

 

Add yogurt, remaining strawberries, and ice cubes. Blend until smooth.

 

Serve immediately.

 

 

 

Red and Yellow Bell Pepper Omelets

 

Ingredients:

1-teaspoon olive oil

1 large red bell pepper, seeded and thinly sliced

1 large yellow bell pepper, seeded and thinly sliced

4 egg whites

½ teaspoon dried basil

¼ teaspoon ground black pepper

Nonstick cooking spray

2 teaspoons grated Parmesan cheese

 

Directions

In a large nonstick pan over medium heat, warm oil; add red and yellow bell peppers and cook, stirring frequently for 4 to 5 minutes. Keep warm over low heat.

 

In a small bowl, lightly whisk together egg whites, basil, and ground black pepper

 

. Coat a small nonstick pan with nonstick cooking spray. Warm over medium-high heat for 1 minute. Add half of the egg mixture, swirling the pan to evenly coat the bottom. Cook for 30 seconds or until the eggs are set.

 

Carefully loosen and flip. Cook for 1 minute or until firm.

 

Sprinkle half of the red and yellow bell peppers over the eggs. Fold o enclose the filling. Transfer to a plate.

 

Sprinkle with 1 teaspoon Parmesan cheese.

 

Repeat with the remaining egg mixture, peppers, and cheese. Serve hot.
